Simply Delicious Tomato Soup

Three tomatoes are walking down the street, papa tomato, mama tomato, and baby tomato. Baby tomato starts lagging behind. The papa tomato gets really angry, goes back and squishes him, says: “Ketchup!” – Pulp Fiction
Ok, so firstly I’m no chef, but I rustled up this little gem last night and it was so tasty I had to share;
Delish Tomato Soup (serves 2)
8 x large organic vine tomatoes, chopped (or tinned plum tomatoes)
6 x mushrooms (larger than button), chopped
1/2 red onion, chopped
2 tblsp pesto
1 stock cube (I prefer the stock pots)
2 tblsp coconut cream (or flesh from tinned coconut milk)
2 tblsp chopped dried tomatoes
1 large clove chopped garlic
100 – 150ml water
1/2 tsp rock salt (regular salt will do)
3 grinds of black pepper
1 handful of chopped basil to garnish
Pop it all in a soup maker (except the fresh basil for garnish) – cook on chunky then blend for a good 30-45 seconds for a thick soup. (Add some boiling water if you prefer a thinner soup)
Taste and add more salt/pepper as required.
Add a sprinkle of chopped basil, grab your favourite bread et voila, a perfectly quick winter warmer.
[A blender or hand whisk will also do the job, just heat through on the hob]
